Florence-born chef Simone Caponnetto is Executive Chef at Locale Firenze. Although his career path is a veritable odyssey through the kitchens of some global gastronomic greats, such as Alain Roux, Yoshiro Narisawa, Heinz Back and Andoni Luis Aduri, his food is rooted deeply in the flavours and produce of Tuscany. His ingredients are, wherever possible, not just Italian but purely Tuscan.
