London, 1 April 2025: On the 2nd of May, Chef Rafael Cagali will welcome Chef Ivan Brehm from Michelin-starred Nouri in Singapore for a one-day-only collaboration across lunch and dinner service at Da Terra.
These four-hands experiences offer a rare opportunity to bring together two restaurants that, despite being on different continents, share a globally inspired approach to cooking. Both chefs hail from São Paulo: Rafael’s cuisine reflects his Brazilian and Italian heritage alongside his international training, while Ivan’s signature “Crossroads Cooking” explores culinary history through a lens of cultural exchange.
The menu will reflect this convergence of approaches and the chefs’ appreciation for the history and provenance that informs their cuisines. Dishes will include Poached Langoustines in Tahitian vanilla and Kampot pepper berry sauce; Pamonha and Caviar; and an original interpretation of the typical Brazilian fish stew - a staple of both restaurants - Turbot Moqueca, Vatapá and Acarajé. The result is a celebration of Brazilian culture, heritage and spices.
Chef Rafael’s cuisine is perfectly executed and overflowing with joy, recalling flavours that shaped his childhood in Brazil and memories of his Italian grandparents. Chef Ivan’s mouthfeels and flavours reveal a complex web of cross-cultural exchanges over the course of gastronomic history, informed by rigorous scholarly research. The menu for the day promises to be filled with playful calls and responses between the courses and technical mastery.
Rafael commented: “I’m thrilled to be welcoming Ivan to Da Terra. We’ve been friends since our days at The Fat Duck and we always have fun when working together. There’s so much crossover in the way we approach cooking, and having the opportunity to create dishes together and explore that synergy will be creatively nourishing, both for me and my team.”
Ivan says of the collaboration: “I’m looking forward to our four-hands service at Da Terra with great anticipation. I’ve long admired what Rafael achieves in his restaurant, and after so many years, it will be a pleasure to reunite in London and cook together once again.”
The wine pairing will also represent a meeting of two great minds. Nicole Roche, Beverage Director at Nouri, and Maria Boumpa, Wine Director at Da Terra, will fashion a drinks offering that, among others, will include Nouri’s range of fruit, whey and vegetable wines. Influenced by the two sommeliers’ wide-ranging international experience, the pairing will also feature unique wines from around the world.
The eight-course tasting menu will be priced at £250 per person including a welcome drink, with an optional wine or non-alcoholic pairing also available on request, priced at £150.
